The grapes are hand-harvested at the start of September, sourced from the hills of the Adige and Vallagarina valleys in Trentino. Chardonnay grapes were soft pressed to yield the best portion of must - after decanting for 10-12 hours this goes into stainless steel tanks for fermentation. The red grapes are harvested early to maintain good acidity levels, and are vinified as for rosé wines. After stabilistaion and clarification the wine undergoes a second fermentation known as the Charmat method.
Beautiful Cherry Pink in colour, fresh berry aromas lead to redcurrant and citrus notes on the palate, balanced by bright acidity and a clean, dry finish.
Perfect as an aperitif or with summer salads - just as enjoyable on its own!
