The history of this beautiful and sprawling winery dates back to as early as 1692, which makes Spier one of the most ancient wineries in South Africa. The beauty of this winery is that the wines are created here with excellent precision, without causing any disturbance to the environment. Cellar Master Frances Smit joined the winery in 1996 and he is one of the major reasons for the transformation of this small Stellenbosch unit into one of the award-winning, reputed wineries that it is today.

Grapes were harvested with a new technology harvest machine early in the morning while the ambient temperatures were still very low and the grapes cool. Harvested at optimum ripeness (between 21° and 23° Balling). Skin contact was allowed for 4 hours at 10°C. Only free-run juice drained by gravity was used for fermentation. The wine is fermented in stainless-steel tanks between 12° and 14°C. After fermentation, the wine matures on its lees for three months before racking and bottling.
