Harvesting takes place at night to make sure that the grapes were as cool as possible. After crushing they were allowed to macerate for 2 days before inoculation and fermentation. Pressed off skins and allowed to go through the second malolactic fermentation, the wine spent 9 months on oak and had minimal handling prior to filtration for bottling.
"This one is big, bold and rich, with red fruit and plum flavours balanced out with a sprinkle of pepper and some supporting tannins." (Tried & Tested, The Wine Merchant Magazine, April 2015)
