The philosophy of Spier's cellarmaster Frans Smit is simple: to get the most out of each grape with as little interference as possible. As one of the oldest farms in South Africa, located in Stellenbosch, Spier is a well-respected ‘big boutique winery’. As custodians of this impressive heritage, caring for their land and the surrounding environment is at the very heart of everything they do.

VINEYARD AND CLIMATE CONDITIONS
These vineyards are planted up to 80 km from the coast with geographical influence from mountains and the cold Atlantic coast. Complexity is achieved by blending these different regional wines.

WINEMAKING
Grapes were harvested at optimal ripeness, gently crushed and de-stemmed to stainless-steel tanks. Fermentation lasted up to 12 days on the skins. A portion of the wine (20%) was transferred to neutral barrels and the balance to stainless-steel tanks with French-oak staves for malolactic fermentation and maturation. The wine matured for a minimum of 12 months before blending.
