Description

  • Origin: Menfi, south-west of Sicily (DOC) 
  • Taste guide: Fragrant and pleasantly fruity, with notes of cherry, blackberry and pansy; on the palate it is soft, fruity, with delicate tannins and vivid freshness.

  • Food pairings: Rich beef dishes from stews to a juicy burger but also chorizo andrich meat based paella.

VINIFICATION

The true expression of the world renowned Sicilian native variety. The Nero d’Avola how it was and how it should be, produced from two vineyards planted on 100% limestone soils.

Maceration and fermentation for 6/8 days at 22-25°C. Maturing for 8 months in concrete tulipe and 19 months in large barrels. Refinement requires a minimum of 8 months in the bottle.
