Produced from select grapes grown in some of the best vineyards in the sun-drenched Western Cape of South Africa. Fish Hoek focuses on stunning single grape varieties and pare back their winemaking until it's artful in its simplicity. Quality and distinctive characters are paramount, and this Pinotage is a superb example of their winemaking.
The grapes were harvested at an average of 25°B, de-stemmed and crushed to stainless steel fermenters where it had 2 days of skin contact before it was fermented. Fermentation took place between 25-27 °C on the skins till dry with soft pump overs every 4 hours. After alcoholic and malolactic fermentation a combination of American and French oak staves were used to give this wine it unique flavor profile.
