  • Grape variety: Sangiovese
  • Taste guide: Medium bodied & oaked in french barriques for 15-18 months. Hints of coffee, leather, and wild berries on the nose with a velvety, silky texture on the palate. The wine has very elegant tannins with a long and persistent finish. Decanting (1hr min) advised and the wine will cellar well until circa 2028.

The Bibi Graetz winery was founded in 2000 on the hill of Fiesole, overlooking Florence. `Soffocone` is a beautiful expression of the Sangiovese varietal grown in the beautiful hillside vineyard of Vincigliata. In the words of Bibi Graetz himself, "The purity of this wine impresses me every single time. With Soffocone I want to bring Sangiovese to the next level of elegance and finesse".

Old vines are the key to every wine Bibi makes. Hand nurtured and tendered, the old vines are coaxed into producing small crops of fantastically high quality. All of Bibi’s wine are made exclusively from indigenous Tuscan varieties.

Without any formal training and with initially only a small 2 hectare vineyard on his parents’ property overlooking Florence, he has managed to unceremoniously gatecrash the staid Tuscan wine scene.
