Wakefield is a third generation family wine business and was founded in 1969 by Bill Taylor. The Taylor family referred to their original vineyard estate as being the Promised Land due to the quality and promise of its rich fertile soils.
The Wakefield estate now covers 750 hectares and has approximately 415 hectares under vine. The estate has a diverse selection of micro-climates, soil combinations and geographical characteristics which combine to create myriad of individual sites which bring their own unique characteristics to the wines. This enables careful site selection to take place ensuring that each grape variety is planted on the most suitable site. Around 60% of the vines are planted on Terra Rossa (red-brown loam over limestone) soils which tend to lie on the hillsides, the rest are planted on deep clay base with rich loam soils on land that rolls down the banks of the Wakefield River.
The Promised Land Shiraz/Cabernet is produced from grapes grown on vineyards across the Wakefield Estate, with a high proportion coming from the world renowned Clare Valley. Here the red-brown loam over limestone soils (also known as Terra Rossa) and the cool climate, are known to be ideal for the cultivation of Shiraz and Cabernet Sauvignon vines.
Each varietal was separately harvested and vinified in Wakefield's winery the allowed to undergo secondary malo-lactic fermentation. The cuvées were then carefully blended and then given a few months oak ageing prior to bottling.
The Wakefield Promised Land Shiraz Cabernet appears crimson red in colour with violet hues. The nose is packed with red berry aromas mingled with warm spice, liquorice and cedar. The palate is dominated by ripe plum and red berry fruit, round and soft with dark chocolate and even more liquorice, finishing full and rich with warm spice and hints of vanilla. One of the very best Shiraz/Cabernet wines we have tasted for ages. So smooth and moreish.
Drinking superbly well but will also keep if well-cellared for a few more years.
