During the night between the 14 and the 15 of January 1968 a devastating earthquake struck the Belice Valley in Sicily. From that same land, where so much was taken away, a group of young grape growers decided to start over, embarking themselves onto a path of evolution. In 1998 a social and economic redemption was accomplished by founding Cantine Ermes's winery, whose headquarters are located in the heart of Belice's Valley, between Gibellina and Santa Ninfa communes.
The word Legato means bring together, which epitomises the partnership between two families of winemakers with a desire to produce elegant, modern wines but only using the wonderful and unique local grape varieties of Sicily.
This wine is produced from the indigenous varietal Inzolia grown on north-east facing slopes of the Belice Valley, some 300 metres above sea level on relatively deep alluvial soils with a mixture of limestone and sand.
Following harvesting, the grapes received 7-10 hours cold skin contact prior to pressing to extract the maximum flavour potential from the skins. The grapes were gently pressed, and the juice allowed to cool down to 10°C. The fermentation took place at controlled temperature using selected yeasts.
The wine is straw coloured with gold hues, offering an intense aromatic bouquet of jasmine and tropical fruit. On the palate the wine is harmonious and delicate combining peach and nectarine flavours with lemony citrus. It has a structured mouth-filling flavour that is fresh and light. There is a long and lingering finish.
