One Chain Vineyards is overseen by Giles Cooke MW and Fergal Tynan MW with Peter Leske being the chief winemaker, One Chain works with growers to source fruit from some of the most established regions of South Eastern Australia. The wines are inspired by a love for the Australian national sport. Indeed, the name One Chain is the imperial measurement for 22 yards, or the length of a cricket pitch. However, you really don’t need to be a connoisseur of the game to be bowled over by the bright red fruit and subtle oak of this Shiraz Cabernet, which takes its name from another cricketing term - The Wrong 'un.
South Eastern Australia covers the area where three states meet - New South Wales, South Australia and Victoria - around the Murray River valley, and often referred to as Riverland. Grapes were harvested in the cool of the night from selected vineyard sites across this region and taken directly to the winery.
Each varietal was separately vinified, with parcels of fruit destemmed and crushed into static and rotary fermentation vessels and fermented on skins for around seven to ten days, at temperatures between 18 and 26 degrees. Techniques were optimised for each individual parcel to maximise the extraction of desirable colour and flavour components while maintaining soft tannin structures. Maturation took place mostly in stainless steel tanks. The constituent wines were then carefully blended - for this vintage 80% Shiraz and 20% Cabernet Sauvignon. The wine was then settled before 10% was then aged in French and American oak barrels with the rest remaining in stainless steel. Finally, all components were back blended. It is these meticulous processes that produce such a superb wine.
Classic style Shiraz Cabernet, it is a bright spicy red with lush black fruits coupled with touches of wood spice, liquorice and cassis following through to a delicious, velvety finish. This is a wonderful easy style that you don't need to be a connoisseur to be bowled over by!
Youthful and spicy, it is ideal on its own or with lightly spiced meats or casseroles. Particularly enjoyable with grilled steak on the BBQ.
