Produced by the notable Wolf Blass, this superb oak aged, dry and full-bodied Cabernet Sauvignon is the pinnacle of their winemaking.
Blass Noir Cabernet Sauvignon was selected from vineyards planted on the distinguished well-drained terra rossa soils of Coonawarra, ranging in age from 15 to over 30 years and known for growing complex, elegant, intensely flavoured fruit. Sourced mostly from vineyards to the north and south of the Coonawarra township, the blend also includes a batch from a vineyard to the east of Penola.
Select fruit was vinified then racked and vatted to allow secondary malolactic fermentation. The wine was aged in a mixture of new and old French oak barrels for 15 months and the cuvées carefully blended by the winemaking team under the direction of chief winemaker Chris Hatcher.
The wine is a very deep red and shows a full, yet tidy Coonawarra nose, with smooth blackberry, mulberry, black olive, earthy mint, dust and even a touch of blueberry creeping in. Alive and somewhat youthful but manages to be restrained and tight. The palate leads to the same fruits as the nose, yet deeper and with the added fun of spice from the oak. Just enough mint to give a contrasting lift to the layers of dark fruits before plentiful fine tannins.
This is serious Aussie Cabernet Sauvignon at its best.
